ost-diagnostic fat intake was assessed using a validated food frequency questionnaire (FFQ) administered between 1997 and 2001 (11). Men were asked to report their usual intake of 61 foods and beverages over the previous year in nine frequency categories ranging from never or <1/month to 6+/day. A common portion size was specified for each food item (e.g. 1 ounce of nuts). Nutrient data came from the US Department of Agriculture. Intakes of each of the fats of interest were calculated by multiplying the amount of each type of fat in the specified portion size of a food item by the frequency of intake of that food item and summing across all foods. To calculate animal fat, total fat in the specified portion size of each food item from animal sources was multiplied by the frequency of intake for each item and summed across all food items. To calculate vegetable fat, total fat in the specified portion size of food items from vegetable sources was multipled by the frequency of intake of each item and summed across all food items. For food items with both animal and vegetable components (e.g., mashed potatoes, pizza, etc.), the fat content from animal and vegetable sources was determined based on a standard recipe. We multiplied intake of each of the fats (g/d) by 9 kcal and divided by total calories per day to calculate the percent of daily calories from each of the fats of interest.
