A favourable interaction between nonpolar substructures or surfaces in aqueous solution that is characterized by a large change in heat capacity. An interaction between a hydrophobic ('water-hating') part of a molecule and an aqueous environment. Particularly significant in establishing the conformation of molecules in solution, and thus their biological activity. Many enzymes have a structure where the polypeptide chain is folded to form a hydrophobic core and a hydrophilic ('water-loving') surface.
