Definitions

A family of chymotrypsin-like serine proteinases that specifically hydrolyze amino bonds on the carboxyl side of hydrophobic amino acids, including alanine, leucine, methionine and phenylalanine. These enzymes play roles in digestion and pancreatic regulation of insulin. Elastin is a substrate for some members of the family. Measurement of the concentration of certain pancreatic elastase isoforms in feces can be correlated to the exocrine secretory capacity of the pancreas.
